CULINARY PROGRAM

This Paladar y Tomar Culinary Program aims to provide authentic Spanish vacations, through enjoyable activities and the real Spanish flavors under the expert purview of a Chef Residente and the guidance of a brilliant private travel director throughout. The full board program contains diverse show-cooking sessions and local producers visits, plus unique excursions to some unmissable Spain UNESCO Heritage Sites all along with the valuable insight only a local can give  leaving you well versed in many foundations of the Spanish lifestyle and the Mediterranean cuisine and culture.

DAY 1 | ARRIVAL AT EL CARLIGTO (D)

Enjoy a relaxed arrival to El Carligto followed by a welcome dinner, the perfect excuse to get comfortable in your new Spanish home.

DAY 2 | EL CARLIGTO (B, L, D)

Fresh poolside breakfast, followed by a late-morning show cooking: “Paella & Fideuà” with Chef Residente David Palacios. Before lunch, enjoy locally-sourced aperitifs with the chef. At dinner time chef David will prepare a light dinner of tapas accompanied by a selection of Spanish wines to experience the range of depth and intensity of “Spanish Reds” and the astonishing diversity of the unknown secrets of the whites.

DAY 3 | CÓRDOBA (B, L, D)

Early breakfast at the Cortijo followed by a private transfer to Córdoba, including a guided tour of the Mezquita de Córdoba and Tabernas de Córdoba route during the afternoon. Transfer back to El Carligto, where the evening will be enjoyed with a light dinner. Al fresco dinner will be served when possible.

DAY 4 | MÁLAGA (B, L, D)

Following breakfast, a private transfer to Málaga’s Atarazanas Market. Immerse yourself in true Spanish lifestyle with chef Abraham Garrote and a wine tasting in the city’s oldest tavern: Antigua Casa de Guardia. A private tour of the Alcazaba and the city center, followed by a tapas-style lunch at some of our preferred restaurants will show you the most of Málaga.

Return to El Carligto, a great space to unwind before the a delectable healthy dinner time led by chef David.

DAY 5 | EL CARLIGTO (B, L, D)

Enjoy a tranquil morning at El Carligto followed by an in-depth “Fish & Shellfish” live cooking with invited chef Abraham, along with lunch. Free afternoon at your own pace.

DAY 6 | GRANADA (B, L, D)

Early breakfast at the Cortijo followed by a private transfer to Granada, including a guided tour of the Alhambra and the Albaycin neighborhood, both UNESCO Heritage Sites. Placid lunch at one of the best tapas restaurants and wine bar in Granada. Transfer back to El Carligto, to enjoy an effervescent and healthy light dinner.

DAY 7 | FRIGILIANA, AXARQUÍA (B, L, D)

Situated in the foothills of the Sierra Almijara mountain range, Frigiliana is an extremely pretty village which has received several awards for conservation and for its beauty. It’s an important hub of artists.  On the way we’ll stop by an interesting winery, Bodegas Bentomiz, where we’ll enjoy lunch following a visit and wine tasting.  Back to El Carligto in time for the farewell dinner, where a tasty menu will be served.

DAY 8 | END OF JOURNEY AND DEPARTURE (B)

Following breakfast, a private transfer back to the airport at your appointed time.

Chef residente
Young, creative and effusively enthusiastic about food, David Palacios renounced a career as a commercial airline pilot to pursue his culinary passions. He has gained accolades for his work from The Wall Street Journal, Travel + Leisure and CNN.com, among others. From poolside paella master classes to four to eight course gourmet tasting menus, David will always provide classy and delicious meals. David speaks English, Spanish, and Dutch.
ABRAHAM GARROTE

Able to transform any cut of fish into a spectacular gastronomic creation through his masterful hands, new seasoning techniques and thorough culinary research, entrepreneur Abraham Garrote is a monarch of Andalucian cuisine. THE PROPERTY: Complete with spacious reception rooms, double bedrooms and fireplaces, it is divided into two houses and each property houses private indoor and outdoor lounges, kitchens, terraces and expansive gardens. A courtyard and infinity pool lend an air of luxurious relaxation to the properties, with an interior floor space of over 300 m2.

 

THE CORTIJO: El Carligto houses two en-suite rooms and two more rooms share a bathroom, while The Hunting Lodge, in a more modern style, enjoys three en-suite rooms. A party of up to twelve can revel in the entire hilltop estate between the two houses, separated by mature gardens and more than 100 m of distance.

An important Roman city and Islamic cultural center in the Middle Ages where many different cultures lived in complete harmony, Córdoba is a delight to explore, and a visit to world-famous La Mezquita should be at the top of any traveler’s bucket list. With its    intruiging taverns, the city is a foodie mecca: travel through time  with the many dishes that make up the fabric of Córdoba.

SEDELLA

A village far above sea level and with a great appreciation of the outdoors, a visit to Sedella is done absolutely right with a hike or bike through the Sierra de Tejeda mountain range, studded with blooming almond trees, and a visit to the Arab-influenced town centre for some traditional roscos al horno and a glass of homemade red wine.

MÁLAGA

Rapidly emerging as a counterpart to Madrid and Barcelona in terms of arts and fine dining, Málaga is becoming known as Andalucía’s new cultural hub. Tastefully restored historic streets studded with bars and restaurants ranging from traditional to contemporary-chic, this is definitely the place to go to try some local moscatel with a bright, fresh seafood dish.

GRANADA

Sevilla’s edgier, more alluring and mysterious cousin, Granada, is home to the Albaycín and the prodigious Alhambra of the Nasrid dynasty – the “Jewel of Granada.” However, this city has even more to discover. Narrow, stepped streets lined with buildings in the typical mudéjar style seep history from every doorframe, and with each tapa you will discover yet another facet of this intriguing city.
